I work at a school. I am the director of the foundation but my office is in the school library. I know all about Cold and Flu season. CLOSED ~ Bob Evans Review and $25 Gift Card Giveaway!


I recently had the opportunity to review Bob Evans products. I have been a Bob Evans fan for about 17 years. I had never ever heard of Bob Evans until I lived in Florida. I lived on the West Coast for a long time and there are no Bob Evans restaurants there.

The first Bob Evans restaurant I ever visited was in Fort Myers, Florida. I had been dating Tom for a year or so and we went to the West Coast of Florida to stay at his mom's condo. One morning we went out to find some breakfast. He saw the Bob Evans restaurant and decided to stop in. I had no idea what to expect.

I loved it. I remember I had sausage gravy for the first time there. It was delicious and served over biscuits. We kept going back any time we visited Fort Myers. We also visited a few times for lunch when we were driving up north to visit Tom's family. I love the Bob Evans burgers!!

So when it came time to find a product to review, I immediately went for the sausage. That is my favorite Bob Evans product. I got home and I looked on the Bob Evans website for a recipe. Then I looked in my pantry and fridge and decided to get creative. Of course, if you read this blog and my personal blog, Carolyn in Carolina, you know I am the queen of willy-nilly cooking. Yes, I went willy-nilly with this recipe as well.

I found biscuit dough, apples, eggs, shredded Gouda cheese and fresh sage. I figured the Bob Evans sausage would pair fantastically with the green apples and sage. Green apples pair well with Gouda cheese. So I decided to bake little breakfast quiches. Maybe quiche isn't the right term. I guess you can say they are breakfast cups. Anyway I began the cooking.

My store out here in the boonies only had Bob Evans links and sausage patties. I bought the patties because I knew I had to break down the sausage to mix with the eggs. I took the sausage patties and crumbled them and started cooking them. When they were browned, I added chopped green apples. To get all the juicy bits off the bottom of the pan, I added a splash of cider vinegar.

Then I grabbed some eggs and mixed them with the fresh sage, Gouda cheese and I decided to add a little cheddar cheese as well. I added a pinch of salt and a dash of pepper for good measure. I added the sausage and apple mixture to the eggs and mixed well.

I took the biscuit dough and cut it into little pieces and rolled it out. I popped the dough into the mini muffin pan and baked it for about 7 minutes. When that was done, I pulled out the mini cups and filled them with the mixture. I baked them for another 8-10 minutes at 350 degrees.

You do not want to overcook the eggs yet you want to make sure they get cooked. Because I was using a mini muffin pan, I had to keep checking. Once they are ready take them out to cool.

I have to say that these turned out pretty darn good. The Bob Evans sausage is really delicious. I love it. There is nothing like eggs and cheese along with the sausage either. What made these super good was the apple. When I bit into one, it tasted like really good quiche. Then I would get a piece of the apple and it added a really sweet yet tarty taste to the dish. The Gouda cheese also added another layer of flavor that was fantastic!

If you never visited a Bob Evans Restaurant, then you must do so. Bob Evans also has products in grocery stores. You would be surprised what they have! Of course, they have sausage. But they also have mashed potatoes, mac and cheese, breakfast bowls, stuffing, slow roasted pot roast, slow roasted chicken, turkey, pork chops, gravies and all types of grilling sausage and so much more. The variety is endless.

CLOSED ~ Skin MD Review and Giveaway!

This time of year is the worst time of year for my skin. It gets dry, scaly and itchy. I buy a tons of lotion and always try and keep moisturized. If not, I have skin that looks like a crocodile. It's not pretty.

Last year I did a review for SkinMD and loved it. So when I was contacted again to do another review a bottle of Skin MD, I agreed. I first tried a sample of Skin MD Shielding lotion at the Type-A-Mom conference a couple of years ago. It was a little sample so I used it on my hands and liked it.

I pulled some info from their site because it explains what this lotion is all about better than I can. I think it's important information for people to know.

From the Skin MD website:
Everyday contact with soaps, cleansers, shampoos, household chemistry and other substances that strip away skin's own protective layer (a thin film made of natural fats, lipids), leaves the skin's deeper layers unprotected. Without this protection in place oils and the natural moisture of the skin evaporates and absorption of irritants is no longer prevented.

Conventional lotions only add artificial moisture to the skin temporarily alleviating the dryness or itching, but these moisturizers don't actually solve the problem, they only treat symptoms without eliminating the cause. Dry skin is unable to absorb the newly added moisture to allow repair – it does not get "locked" into the skin. It gets lost easily. That’s why we keep applying more and more of the conventional lotions. Even so, skin easily gets addicted and may even suspend production of it's own moisture, relying on added moisturizer.

It really works. It is a great lotion especially for really dry skin. Hubby really likes it too. I had to hide my bottles from him so he wouldn't use it all. The lotion is neither thick nor watery. It is not greasy and lasts a long time. It goes on smoothly and it is absorbed immediately. You only have to use a little bit as well. Unlike some lotions where you have to spread half the bottle on just to feel like you have moisturized.

I like that the lotion is unscented as well. My skin feels moist and hydrated now and I love that.It is a little pricey but it is well worth it if you have dry skin and nothing else has worked for you.

Here’s a delicious, quick-fix recipe that uses flame-grilled salmon fillets bursting with flavor, plus offers 300 mg of DHA per serving:

Grilled Salmon with Garden Vegetables and Linguine
Serves 6

Ingredients:
6 Gorton’s Grilled Salmon Fillets
1 lb. uncooked whole wheat linguine
1 cup fresh basil leaves
½ cup chicken broth
2 Tbsp. olive oil
1 cup broccoli florets
1 small red onion, sliced
1 medium bell pepper, thinly sliced
1 cup zucchini, sliced
2 cups fresh spinach
½ cup grape tomatoes, halved

Cook salmon and pasta according to package directions. In blender, combine basil, chicken broth and 1 Tbsp. olive oil and blend until smooth. Set aside. Add 1 Tbsp. olive oil, broccoli, onion, bell pepper and zucchini to large skillet. Sauté over medium-high heat until tender crisp (about 2 minutes). Add spinach, basil sauce and cooked pasta to the sautéed vegetables and cook until spinach is wilted. Spoon pasta mixture into a serving bowl and toss with tomatoes and cooked, flaked salmon.

Ace bandage Review!


A few weeks ago, I threw out my back. I was making a fire and picked up a big log and boom, it just went out. After a few days in bed and a lot of pain, it went away but I will, no doubt, throw it out again.

About a week after I threw out my back, I got a the opportunity to review some Ace products. Unfortunately, I didn't have the Ace Bandage Lumbar Support belt that week that I threw it out. I could have used it.

But two weeks ago, hubby threw out his back. It was a bad thing but, luckily, we had the Lumbar Support belt. Hubby was a little reluctant to try it at first but after 2 days of pain, he decided to try the Ace belt.

It really worked for him. He said it was comfortable and really supported his back at home and at work. The great thing about this belt was that besides being able to wear it around your waist to support your back, it also has extra support straps that you can tighten for more support. It also fits all sizes because you can tighten the belt. I am a little fluffy and it fits me just fine!

Hubby wore it a few days and was good as new. I only wish that I had this belt when my back went out. Hopefully, I won't have to use it but I know that when I do, it will do a good job. The fabric is a breathable so you don't get all sweaty. It is also a breeze to clean. You pop it in the washer and air dry.

The other item I received was the Multi-Purpose Ice and Heat wrap. I actually had to use this wrap last week. I have decided I need to shape up this year so I started doing the Wii Fit again and maybe it had been a little too long since I had exercised and I hurt my knee.

This wrap was the thing I needed though because I am known to be klutz. Since I was small, I have sprained and strained all sorts of muscles and joints so I am an expert in caring for them. What I have learned is you need heat and cold. This is where the Multi-purpose wrap comes in very handy.

You can pop the insert into the microwave and heat it up. Then you can pop it into the freezer and get it cold. The wrap is adjustable so you can use it on knees or elbows or anywhere else you can wrap it. It is also easy to clean. All you do is hand wash and air dry.

I have used ACE products for years. Like I said, I am sort of a klutz so I always have a few ACE bandages in my house. My favorite is a wrist support brace that I bought a few years ago. I still use it. Ace products last forever and are great quality products and I can always count on then to be there to help my aching joints and muscles heal.

I will now be counting on these two products as well.

Ingrid Hoffman T-fal Paella Pan Review + recipe!

The other day I received an Ingrid Hoffman T-fal Paella Pan to review. At first I thought "holy smokes" I have never ever made paella and now I will have to make it. Then I thought that this would be a culinary challenge that I would take on!

Paella is one of those dishes I have seen and thought I could never make. I always felt that it was totally complicated and that to make it would require so much culinary expertise that I couldn't handle it. It is also one of those dishes that has so much seafood in it that I knew I wouldn't like it. I don't really like seafood. I don't eat fish. To me, paella was all about the seafood.

I thought about making something else in the pan but since it is a paella pan, it didn't feel right.

I received the pan and immediately could see this is a really quality pan. It is well made. The aluminum construction allows for fast heating. The non-stick interior is fantastic because nothing sticks to it. The handles are sturdy and do not get burning hot when the pan is hot. The interior bottom has a cool Thermospot heat indicator that turns solid to let you know that the pan is pre-heated and ready to use. Loved that!

The bottom of the pan has a very pretty design. I wish I had a hanging post rack because the pan would look great. The pan can also be popped into the oven and works with all types of stoves.

So here I was making paella for the first time. If you follow my other blog, you know I post a lot of recipes there because I love to cook and eat. So this review was right up my alley. To begin with, I perused the internet and, specifically, the Food Network to find a recipe. I found tons.

I ended up printing up 4 that I took bits and pieces from. The recipe I took most from was one from Ingrid Hoffman herself. I took some tips from the other recipes but her recipe was the best one overall. It did feature scallops but I just left that ingredient out.

I started out with one whole chopped onion, 6 chopped garlic cloves and one red and yellow pepper julienned. I began with 3 tablespoons of olive oil and then added the onions, garlic and peppers and sauteed them. I then added some chorizo.

I was supposed to use Spanish chorizo. I could not find Spanish chorizo here in old Sylva, NC so I tried the next best thing: Mexican Chorizo. I took it out of the casing and added it to the pan. Then I took some chicken thighs I cut into cubes and added them to the an as well. I also added salt, pepper, Spanish paprika and saffron.

Next, I added some andouille sausage. I figured that the Mexican chorizo with the andouille sausage would sort of make up for the fact I had no Spanish chorizo.

After mixing all the ingredients, I added the rice along with a can of drained whole tomatoes. I made sure to drain the tomatoes but kept the liquid and added as needed when I added the other liquid. I cooked the mixture for about 5 minutes. On another burner, I had some broth and white wine boiling. I started added the broth and wine mixture slowly to the paella pan.

Making the paella was sort of like making a risotto but easier. I didn't have to stand there and stir. I would add the liquid and then let it soak in and add more liquid and stir. Once all the liquid was added, the recipe called to put some aluminum foil over the pan and let it simmer for about 20 minutes.

I just played it by ear. I would test the rice to make sure it was getting cooked. After 20 minutes, I added the shrimp and peas and let it cook about 10 minutes more.

What I loved about this pan is that it held all those billion ingredients with no problem. I can also attest it is very nonstick. I was distracted by the TV for a minute or so and when I got back to the pan the liquid was almost gone and I checked the bottom and it was browning up but it did not stick at all. I think I could have gotten a nice crust on the bottom as well if I wasn't so darn hungry to eat my masterpiece.

Let me tell you that my paella was one of the most beautiful dishes I have ever created. It was a sight to behold. But best of all, it was delicious. I was so surprised as how good it was. Having the paella pan really, really helped. It was the perfect thing to make a great paella. I know I will be making this again and again.

I have to mention that the pan was a snap to clean. I just tossed it in hot soapy water and wiped it clean. It is also dishwasher safe but I have a tiny demented dishwasher so it was easier to hand wash it.

My only complaint is that it does not come with a lid. A lid would be the one thing that would make this pan even better. Using foil was a pain but it worked. I will have to try and find one somewhere. I cannot wait to try it again!

Because paella is a perfect dish for entertaining, I will be using this pan a lot. I am sure that it would also be great to make risotto, eggs or any casserole dish. Hence, the need for a lid! This paella pan gets a total thumbs up from me. I loved it. I saw a few more pans I need as well. Hubby might be have a huge "What to get me for Christmas" list this year!!

If I leave it at home, I can leave notes for hubby and reminders for me. If I take it to work, I can have a handy dandy, stylish dispenser that will make my co-workers jealous. What to do, what to do?

All I know is that if you have someone in your life like me: a Post-it Noteaholic, this is the perfect gift for Valentine's. If hubby had bought this for me instead of flowers or candy, I would be perfectly happy. The dispenser would give me years of enjoyment without adding inches to the old waist!

It is also a perfect birthday gift, Administrative Assistants Day's gift or a great Mother's Day gift. My mom would go nuts for one of these but she is not getting mine!
