I will be MIA again!

I am out of here! I will be gone for a week on vacation. Our cats are mad they get left with the cat/house sitter but oh well. We will be in Jamaica. I so need this vacation. I am participating. I received this Women's Regular All-over Control Slender Grecian Swimsuit from Lands' End so I could participate. I might be a curvy girl but I am also very confident in my body and do not let a little extra padding stop me from enjoying summer.

I am thrilled with my new Lands' End suit. It is form fitting but it doesn't pinch. It fits me perfectly. The best thing is that it gives the girls the support they need and holds them in. It also flattens my problem spot, my tummy. It smooths my body out. I am heading to Jamaica next week and this is the perfect suit! The only thing I noticed is I desperately need a tan!!

They Shoot Horses, Don't They?

Okay Monday I threw my back out while standing up. I realized that as I hit 50 in a couple of years, my body is falling apart. So I throw out my back and think I will get better. I ended up at the ER the next day. Side Note: The ER I go to is the same one featured in the movie The Fugitive with Harrison Ford. Yes, folks, our ER is freaking famous.

Anyhow, I go and get a shot, drugs and a few days off. I am feeling a little better but have to go to a specialist. Hopefully he will give me more shots and drugs. But most likely I will get lectured and told to lose weight and exercise. Sigh

Anyway, I know I have to pick a Costa Rica giveaway winner and have to add more giveaways. Hang in there because hopefully this weekend I might feel up to it! In the meantime keep entering the ongoing giveaways!!

Closed ~ Saucy Mama "Fab with Five" Recipe Contest + Giveaway!!!

Some of you know that last year I actually won the Saucy Mama recipe contest. I still don't believe it since you all know that my style of cooking is totally random and willy-nilly. I can't follow a recipe to save my life.

This year I was once invited to participate. You know I had to because I have to at least try to keep my title. I almost didn't because the rules were different this year. To participate, we could only use five (5) ingredients. Holy smokes. This was a difficult task.

I thought really hard about what to make. I had been craving empanadas (meat pies) for a while. When I tasted the Saucy Mama Santa Fe Chipotle dressing, I thought I could probably make a pretty good empanada using that condiment. I thought back to when I was a little girl and watched my abuelita Gilda make empanadas. Hers were so delicious. Of course, her empanadas used like 5,000 ingredients so I had to really think about how to recreate the recipe.

Her recipe called for ground beef, olives, onions, garlic, cumin, cilantro etc. etc. etc. I couldn't use those things and I needed to add more flavor so I decided besides the ground beef, I would use Mexican style chorizo (sausage) to give it a little more flavor. My abuelita always added olives to her empanada meat so I had to use olives. The olives add a little bit of tartness. Luckily, the Saucy Mama Santa Fe Creamy Chipotle Dressing added enough spice that I didn't miss all the other spices.

I needed to have the dough for the empanadas. Usually I would make my own but that would add about 3 extra ingredients if I had made my own empanada dough so I had to improvise. I decided on pie crusts since I could not find my beloved Goya Discos. Usually I can use those in a pinch because it is premade empanada dough but because I live in the boonies, sometimes it is hard to find necessary ingredients.

So my five ingredients were: Saucy Mama Santa Fe Creamy Chipotle Dressing, Mexican chorizo, ground beef, pie crusts and pimento stuffed olives.

Spicy Two Meat Olive Empanadas (makes 10 empanadas)

Ingredients:

1/2 cup Saucy Mama Santa Fe Creamy Chipotle Dressing
Package of ground beef
3 chorizo sausages
8 8-10 roughly chopped olives
A packet of Pillsbury pie crusts
Free Ingredients: salt, pepper and olive oil

Directions:

Brown the ground beef and chorizo in a olive oil. Add salt and pepper. Roughly chop the olives and add into the meat mixture. Add the Saucy Mama sauce into the mixture and let simmer.

Unroll the pie crust dough and cut into rounds. Stuff the dough round with the meat mixture, about teaspoon. Make sure it is not too full. Press the edges together and then finish off with a fork. Fry the empanadas in some olive oil about 2 minutes per side. Cooking time will depend on how hot your oil is. Once browned, take out and drain on paper towels.

Serve hot with a side of the Saucy Mama Santa Fe Creamy Chipotle Dressing or drizzle a little on top.

That's it. It can't get easier than that. The Saucy Mama Dressing gave the meat mixture enough flavor that was lost on not being able to add other ingredients. Pie crusts are fragile so you have to be careful when frying but they do puff up nicely. I do prefer real empanada dough because it is more dense. But the pie crust actually make these more flaky and lighter.

The empanadas were delicious. These are great for parties, appetizers, snacks or even a meal. Serve s few empanadas with some white rice and black beans and it is a complete meal. My abuela Gilda would be proud!

Black & Decker Ultimate Sandwich Recipe Contest: Caro's Eggplant Parm Sandwich


This is my entry into the Black & Decker Ultimate Sandwich Recipe Contest. I was one of the 50 bloggers chosen to receive a Black & Decker Convection Toaster Oven and submit an entry.

The recipes will be judged on the yumminess of the sandwich, creative use of ingredients and originality. Bad part is they are also judging on how yummy the sandwich looks. I am not a great food photographer so hopefully my pictures look okay! Once the judging is over, the judges will choose 4-5 blogger recipes and recreate them and then judge them on taste. The blogger with the yummiest sandwich will win a $1,000 cash prize and have their recipe professionally photographed and included in a nationally distributed back-to-school themed feature release this summer! Cool.

You all know I can't follow a recipe to save my life and then to have to create one is sort of a challenge but I did it. The hard part was coming up with a sandwich recipe. I put a lot of thought into what to make then one day while watching a TV show where someone was eating Eggplant Parmesan, I had a brainstorm.

I love Eggplant Parmesan but it is a lot of work to make it so I rarely do. I wondered if I could make a sandwich with the same ingredients and actually make it work. I figured I could deconstruct the dish and try to pt it all back together in a sandwich form. It actually worked. Here is my recipe.



Caro's Eggplant
Parm Sandwich

Ingredients* (to make 2 sandwiches, just double the ingredients)

4 slices of eggplant, thinly sliced
2 slices tomatoes

2 slices Italian Tuscan style bread (or any crusty bread)
1/4 cup of shredded
Parmesan cheese
1/4 cup of
Ragu spaghetti sauce (or your favorite pasta sauce)
1/4 cup of Olive oil
Fresh Basil leaves

Butter

Salt

Pepper

Directions

Thinly slice eggplant. You will n
eed about 4 slices per sandwich. Completely coat the eggplant slices in olive oil and sprinkle with salt and pepper. Cook eggplant in toaster oven at 400 degrees for about 10-12 minutes. Finish the eggplant off by broiling 3 more minutes to brown.
Put aside. Take the bread slices and butter one side of the bread. Add the shredded Parmesan on top. Take the bread and toast it in the toaster oven for about 5-7 minutes. Make sure the Parmesan cheese is melted and the bottom toasted. You want the bread toasted well so it can hold up to the tomato sauce.

Start putting your sandwich together by taking the spaghetti sauce and smearing some on both toasted bread slices. Then place the eggplant slices on one slice of bread. Top with Mozzarella cheese. On the other slice of bread add the tomatoes and top with more mozzarella cheese.
Put into and broil for about 3-5 minutes or until the mozzarella cheese has melted and becomes soft. Take both slices out of the oven. Add the fresh basil leaves and put the sandwich together. Slice. Serve with a side of sauce and enjoy!

Let me tell you that I was not sure how this was going to work. It can get a little messy with the tomato sauce and melted cheese but it was so good. It really tasted like eggplant Parmesan but it was much easier to make. The bread with Parmesan cheese is a great substitute for the breading you normally use on the eggplant. And the flavors really melded together for a delicious mouthful! Buen Provecho!

CLOSED ~ Maggi Products Review and Giveaway!


Growing up there are products that were always in my house. One of those products was Maggi Bullion cubes or "Cubitos Maggi" as my mami and abelita called them. There was always a packet of cubitos Maggi in our house. They would use them to make stews, soups and as a spice to fry up chicken or to make rice.

My granny would always have the Maggi sopa de vegetales, pollo and fideos (chicken, veggies and noodles) in her house. When we got sick, she broke out the packet of soup and gave us some so we would get better. It's funny that I remember something so random but that's just me.

As I grew up, I always had cubitos Maggi in my pantry as well. I love using them to make chicken broth when I need it for a recipe. I also love using them when I need to spice up my arroz con pollo or other meals. The cube has so much flavor that I use it as I would salt or pepper.

When I received the opportunity to review some Maggi products, I was all over that because this is a product that I have used and will continue using. I received a basket of items, including the garlic and onion bullion cubes, chicken flavored bullion powder, Sopa de fideos (chicken noodle soup) and some sofrito paste. I had never tried the sofrito paste so I decided to use that. Sofrito is a mixture of garlic, onion, tomatoes and spices used as a base for cooking traditional recipes.

I wondered if I could achieve a one pot dinner with the sofrito paste and no other spices. I started by frying up some chicken thighs. Then I added the sofrito paste and finished cooking the chicken. I then added some chicken broth and simmered it all together. The only spices I added were salt and pepper. Once I let the chicken and sofrito cook a while, I added some rice and let it all cook up. To finish the dish, I added some fresh cilantro.

It was delicious and easy. The dish was so flavorful because of the Maggi sofrito paste. Hubby loved it! If you have never tried these products, you really should. They are very good. I love the fact that every time I use them, they remind me of my childhood.

Kymaro CardiWrap Review

I recently had the opportunity to review the new Kymaro Cardi Wrap. The Cardi Wrap is a wrap that you can wear in different ways. At first I was a little skeptical but as I read the booklet that was sent, I realized that you can wear it a lot of ways.

Not only can you wear it as a wrap but it can be a scarf, shawl or wear it like a top. It comes with a cool accessory kit that includes bangles and cute pins so you can play and twist, knot and make it up in different styles.

I have to admit that some of the instructions were a little confusing but that's because I am a fashion dope. Let's face it folks, I am not that stylish. I also make a sucky model but I took some pictures of me in the Cardi Wrap so you can see how versatile it really is.

I also took some pictures off their site because I wanted you to see how cool this little wrap really is. What I liked about it is that it comes in regular sizes or plus size and I am all about plus size. It is the perfect wrap as is. It works like a cardigan which I love. I know I could toss this on over a dress or jeans and it would work perfectly.

I like that it can be used as a scarf and you can use it to wear to a fancy dinner or the park. The booklet gives you great ideas on how to wear it. I also love that it covers up the muffin top and belly. Worn correctly, it can slim you down. The fabric is soft and is light enough to be worn as a summer wrap, a spring sweater or layered in Fall or Winter. If you go on the site, you will see that some of the ways to use this is like a blouse/sweater.

It comes in 7 colors (I got black, of course) and is only $39.95 with $9.95 shipping charge. You can go to BuyCardiWrap.com and check out the colors! For under $50 bucks you get a clothing item that can be worn anywhere at anytime and in different ways. Let me tell you that is huge. Think of all the money you will save on this one item.

CLOSED ~ Flip Camera Giveaway

I am getting crazy again!! I have a Flip camera to giveaway. Brand New never used although I did open the box to take a picture of it. This is a Cheerios Flip. I love my Flip but I also have a Sony Bloggie now and don't need another one.

Remember, they are no longer making Flip's so get one while you can. You ask, why is the deadline so far away? Well, I am going on vacation the first week of June so I can't choose winners and I might as well let you guys get as many entries as you can. WOO!!

I am back!

I am back and will post the Chili's winner tonight or tomorrow. I also have a lip Camera giveaway going up this week and a few cool reviews especially a cool Cardigan Wrap! I will have a $30 gift card as well. YAY!
