
Some of you know that last year I actually won the Saucy Mama recipe contest. I still don't believe it since you all know that my style of cooking is totally random and willy-nilly. I can't follow a recipe to save my life.
This year I was once invited to

participate. You know I had to because I have to at least try to keep my title. I almost didn't because the rules were different this year. To participate, we could only use five (5) ingredients. Holy smokes. This was a difficult task.

I thought really hard about what to make. I had been craving
empanadas (meat pies) for a while. When I tasted the Saucy Mama Santa Fe Chipotle dressing, I thought I could probably make a pretty good
empanada using that condiment. I though

t back to when I was a little girl and watched my
abuelita Gilda make
empanadas. Hers were so delicious. Of course, her
empanadas used like 5,000 ingredients so I had to really think about how to recreate the recipe.
Her recipe called for ground beef, olives, onions, garlic, cumin, cilantro etc. etc. etc. I couldn't use those things and I needed to add more flavor so I decided besides the ground beef, I would use Mexican style
chorizo (sau

sage) to give it a little more flavor. My
abuelita always added olives to her
empanada meat so I had to use olives. The olives add a little bit of tartness. Luckily, the Saucy Mama Santa Fe Creamy Chipotle Dressing added enough spice that I didn't miss all the other spices.

I needed to have the dough for the
empanadas. Usually I would make my own but that would add about 3 extra ingredients if I had made my own
empanada dough so I had to improvise. I decided on pie crusts since I could not find my beloved Goya Discos. Usually I can use those in a pinch because it is premade
empanada dough

but because I live in the boonies, sometimes it is hard to find necessary ingredients.
So my five ingredients were: Saucy Mama Santa Fe Creamy Chipotle Dressing, Mexican
chorizo, ground beef, pie crusts and pimento stuffed olives.
Spicy Two Meat Olive Empanadas (makes 10 empanadas)
Ingredients:
1/2 cup Saucy Mama Santa Fe Creamy Chipotle Dressing

Package of ground beef
3
chorizo sausages
8 8-10 roughly chopped olives
A packet of Pillsbury pie crusts
Free Ingredients: salt, pepper and olive oil
Directions:
Brown the ground beef and
chorizo in a olive oil. Add salt and pepper. Roughly chop the olives and add into the meat mixture. Add the Saucy Mama sauce into the mixture and let simmer.
Unroll the pie c

rust dough and cut into rounds. Stuff the dough round with the meat mixture, about teaspoon. Make sure it is not too full. Press the edges together and then finish off with a fork. Fry the
empanadas in some olive oil about 2 minutes per side. Cooking time will depend on how hot your oil is. Once browned, take out and drain on paper towels.
Serve hot with a side of the Saucy Mama Santa Fe Creamy Chipotle Dressing or drizzle a little on top.
That's it. It can't get easier than that. The Saucy Mama Dressing gave the meat mixture enough flavor that was lost on not being able to add other ingredients. Pie crusts are fragile so you have to be careful when frying but they do puff up nicely. I do pref

empanada dough because it is more dense. But the pie crust actually make these more flaky and lighter.

empanadas with some white rice and black beans and it is a complete me
