Sometimes, I just want a quick meal for dinner. I love cooking but I get lazy. I also like to clean out my pantry and fridge and make something delicious. I love pantry cooking because it forces me to be creative and it also cleans out some of the stuff I have and leftovers as well.
Here is one meal I made the other day that used up tons of mashed potatoes I had and some freezer food as well. It was quick and yummy as well.
There is no recipe but you will need mashed potatoes, peas and carrots, onions, ground meat (you can use whatever you like) and spices.
I had some leftover mashed potatoes. I made them creamier by adding a little heavy cream and butter. I also added a little horseradish sauce to change the taste and give it a little spice.
Saute your meat with some chopped onions. Add salt and pepper to taste.
Grab your frozen peas and carrots and add them to the meat to warm up.
Place the meat and veggies into a casserole dish.
Cover with the mashed potatoes. Add a little cheese on top. I used cheddar but any cheese works.
Bake until brown on top.
Serve and enjoy! Shepard's pie is a dish I love but never make. But when I have leftovers again, I will definitely make again. It is a great use of leftovers!

Your recipe is a winner! I have never made it before, but I've had it a couple times when out and I just love it. Something about the basic ingredients combined "just so"! Yummy!

ReplyDeleteI like shepherds pie. To me it is one of those comfort foods and really you can make it as simple or as complicated as you want. I make it when I have leftovers like you did, and it works well. Its such a nice hearty dish
