Avocado and Chickpea Salad from The Hundred Foot Journey #100footjourney

As you all know, I have been sharing recipes from The Hundred Foot Journey. I love cooking so it was natural for me to share them. Plus, I love Helen Mirren and I really want to see this movie. I am going to see next weekend! I am very excited.

In any case, when I shared the recipes, I also kept hard copies in my "TO COOK" file for future use. I have been so busy with the move and our housewarming party that I haven't had time. But the other day, I realized that I had all the ingredients to make the Avocado and Chickpea Salad. So I had to make it.

The recipe was super easy. I am posting it as well. Of course, my final product does not look anything like the photo in the recipe. But it was delicious nonetheless. I am posting the recipe at the bottom in case you want to try it!!

Here is how I made it.


Put olive oil and lemon juice in a bowl. 



Chop the ginger. I grated mine instead because it is easier. 



These are the spices needed. 


Mix the spices with the olive oil, ginger and lemon juice. Mix and set aside. 



These are the rest of the ingredients needed. 



Chop the green onion. 



Drain the garbanzos and put them into the bowl with the green onions. 



Chop the avocados and place them in the bowl and mix gently. Then add the vinaigrette and mix. 



The finished product!! I served it up in the avocado trying to be fancy. I have to say that the salad was delicious. It was light and perfect for summer. It was also filling because of the chickpeas. The cardamon added such a great flavor to the dish as well. I recommend this if you want a fast side dish! 

I am so glad I tried this dish. If I make more of these recipes, I will definitely be posting them here!

  2. We eat avocados and Chick peas and this is a recipe that I am going to make for me and my Dad. It is healthy and I like that I put the ingredients back into the avocado shell!

  9. I recently bought smoked paprika and cardamon. The cardamon was part of making your own chai spice mix, but I haven't used the smoked paprika yet - this is the perfect recipe to try!
